The wave out of the city - towards a greener future

Our core product is nature, the sea, and the magic that happens when we bring good people together around it. Our goal is to create the experiences we remember together, and for us, it’s about creating movements with a fundamental vision of ‘creating the wave out of the city.’ We have a responsibility to give more than we take, which is why our sustainability strategy is a vital part of the vision to create the wave out of the city. Our sustainability strategy addresses the issues we care most about, where we’ve prioritized reducing our resource consumption, increasing recycling, and, most importantly to us, strengthening the local ecosystem in and around Lynæs. We understand that every decision – from the materials we use to the choices we make – directly impacts both the environment and society. That's why it's our ambition to do what we can to create the wave out of the city - towards a greener future.

It’s important to emphasize that for us, sustainability is about being in a continuous process of improvement. We’re not green just because we have an eco-label; we still serve a beef burger, even though we want to reduce our CO2 footprint. And we will continue doing so, because we’re not here to tell you what to choose – but we do have a responsibility to challenge and inspire you to make better choices.

Certification schemes

We received the Organic Dining Label in Bronze at the end of 2024 – something we are very proud of. We haven’t gone green just because we have a label, but we are helping to raise awareness about making better choices, both for our guests and employees. And if it becomes a trend in Halsnæs, we will have contributed to creating a movement! Our goal is to reach the Silver Label by 2028, but more importantly, we focus on reducing our carbon footprint in the food we sell. One of the outcomes of working with the dining label is that we’ve implemented a reporting tool that helps us track exactly that!

Waste, energy and water

In the coming years, we will focus on efficient waste sorting. Our goal is to optimize waste sorting areas for both employees and guests, contributing to the circular economy through effective recycling and reducing our overall environmental impact.

We focus on prioritizing non-chemical and environment-friendly cleaning products and biodegradable packaging. This is aimed at reducing our plastic consumption and promoting a more sustainable use of resources. Among other things, we have implemented a dosing system for cleaning products to reduce our packaging usage.

We focus on sustainable accommodation options. We have already introduced our first Bungalow, which is the first prototype of a new type of 'luxury shelter.' It is designed for year-round use, maximizes space, and is locally designed and built with the most sustainable materials available.

Purchasing policy

A significant portion of our emissions comes from our product purchases, which is why, in the coming years, we will focus on prioritizing sustainable sourcing and supporting our local ecosystem. Currently, we purchase locally from places such as Andelsgården Lerbjerggaard, Sølager Værksted, Engmosegaard, and local fjord shrimp when they are in season. Through our membership with the Spisekammer Halsnæs association, we help strengthen the local supply chain and hope to have the opportunity to buy even more locally in the future.

In addition to our food procurement, we focus on setting requirements for our suppliers of clothing for the shop, bedding for overnight guests, and consumables. We prioritize investigating how, in cooperation with our various suppliers, we can reduce CO2 emissions.

Communication

We make an active effort to inform and educate our staff on sustainable choices. We consider it essential that our employees are equipped to make sustainable decisions in connection with their tasks and the challenges they face in their daily work.

We focus on making sustainable operational decisions and including our guests and employees in the sustainability agenda. For example, we have installed sensor-controlled taps and charging stations for electric cars. Moreover, we aim to involve our guests in our vision of creating a wave towards a greener future, with inclusive and creative initiatives to promote sustainable choices during their visit. It is also important to us that our employees are properly trained in waste sorting, and with continuous follow-up and training, we will ensure that sustainable initiatives remain an integral part of our daily operations.

We offer activities that give you the chance to leave your car behind. This includes hiking trails, bike rentals, and a running club, offering guests the opportunity to enjoy activities without needing to use their car.
